According to their site, Still Austin is a world-class distillery, located in the heart of Austin, that’s open every day for the public to have a drink, listen to live music, and take a tour.
It’s one of the only distilleries in Texas to source grains from local farmers, distill ecologically in-house, and age in the Texas Hill Country.
Production
According to their site, their cask strength rye “combines the nuance of our beloved “Artist” Rye Whiskey with the robust intensity of a barrel-proof spirit. The result is an all-new “Artist” of distinctive vigor and complexity.”
They also mention that they tapped “Nancy ‘The Nose’ Fraley” to select the most exceptional barrels of their Straight Rye Whiskey (The Artist), then blend and bottle them at the same proof at which the spirit was aged.
Still Austin Cask Strength Rye Whiskey Review: Flavor Profile
Nose – 3.5/5
Much sweeter than expected (almost like a bourbon). Deep caramel chews, oak, and vanilla dominate. There’s also some slight rye and baking spice.
Palate – 3.5/5
Heavy baking spice and caramel come in initially and it’s less spicy than expected. But as you chew it, the rye and heat really come out. That paired with the deep caramel and vanilla coming in later in the sip makes it a really dynamic pour. Again, almost like a bourbon.
Finish – 3.75/5
The hot and unruly start fades off quickly into the sweet caramel and vanilla notes. Rye comes in near the end with an oaky dryness. This one is long and sweet, not too dissimilar to a cask-strength bourbon
Value – 3.5/5
Coming in at $65, I think this is an above average value. It’s hard to find many cask strength whiskeys worth buying for less than this, and this is a really good bottle.
I think this is a solid bottle to try if you like a cask rye that has some of those traditional bourbon properties.
