Who They Are
Eight Settlers Distillery, in Cottonwood Heights, Utah, takes inspiration from the pioneering history of the region. The distillery’s name honors the eight families who settled in the area—then known as the town of Butlerville—in the mid-1800s, transforming untamed wilderness into a community.
Founded by Radu and Katia Dugala, Eight Settlers is more than a distillery: it’s the culmination of a distilling legacy. Radu, a second-generation distiller, learned the craft from his grandfather in Romania. After years in the restaurant business, the Dugalas embraced the challenge of opening a distillery during 2020’s global uncertainties, creating a space where history and craftsmanship intersect.
Devil’s Gate Bourbon name pays homage to the rugged, narrow, rocky quartz passage along the pioneer trail near the Salt Lake Valley. The bourbon pays respect to the resilience required to overcome the obstacle to move westward.

Nose – 2/5
From first Nose, Devil’s Gate Bourbon is a robust warmth of caramel and vanilla, intertwined with a subtle campfire smokiness. Notes of toasted oak come through strongly, paired with hints of dried fruit—think apricots and raisins. As it opens up, there is a faint note of baking spices.
Palate – 3/5
On the Palate, Devil’s Gate delivers a rich and bold experience. The sweetness of caramel sweetness leads the charge, complemented by a touch of chocolate. It reminded me of tossing in a couple of Milk Duds when I was a kid at the movies. Midway, there’s a distinct spiciness. While the grain bill is undisclosed there is definitely a rye influence which gives good balance to the initial sweetness. The mouthfeel is oily, buttery and smooth, with a slight chewiness that bourbon enthusiasts will appreciate.
Finish – 2/5
The Finish lingers long due to the oily Palette. Notes of black pepper take over and end with just a hint of fruity sweetness. Definitely not a deeply complex finish.
Value – 2.5/5
At $40, Devil’s Gate Bourbon offers good value for an MGP sourced spirit but it’s not remarkably different than several other MGP products on the market. If you find yourself in Utah, its worth a pickup. If you have to pay for shipping, then I recommend a pass.
