A Maple Influenced Soft Spoken Pour
Gervasi Spirits has quickly carved out a reputation as a serious craft producer, even if its home base in Canton, Ohio—a vineyard and luxury resort—isn’t what most bourbon enthusiasts expect. But unconventional beginnings can yield surprising results. With multiple awards, including two Silver Medals at the 2025 San Francisco World Spirits Competition and a Grand National Champion title at the U.S. Open Spirits Championship, Gervasi is proof that good whiskey can come from someplace other than a rickhouse in Kentucky.
Their Maple Cask Bourbon continues their theme of a Kentucky-style straight bourbon. The idea isn’t new—maple finishing has been explored by both major and craft producers. The maple is meant not to overwhelm or disguise the base whiskey.
As with their Rum Barrel and Straight Bourbon expressions, the production remains in-house. Gervasi Spirits operates like an estate-wine model maintains control over sourcing, aging, and finishing. In an era when many brands rely on sourced distillate and outsourced partnerships, Gervasi’s vertically integrated structure is both uncommon but appreciated.
What emerges in this expression is a bourbon that speaks softly but carries character. It doesn’t scream out about proof or lineage. Instead, it layers maple sweetness over a familiar foundation to produce gentle flavor. It’s not chasing trends—it’s offering variation. And that, in a crowded market of finishes and stunts, may be the most refreshing thing of all.
Gervasi Spirits Maple Cask Bourbon Review: Tasting Notes
Nose – 3.8/5
The Nose offers warm maple syrup, vanilla, and a touch of light oak—everything you’d hope for in a maple-finished bourbon. The balance is clean, not an artificial or overly sweet character. The Nose doesn’t unfold in layers or deliver the kind of complexity that allows it to move into Gold territory.
Palate – 3,9/5
Strong notes of caramel, maple syrup drizzle, and toasted pecans along with cinnamon notes. The maple is present without overwhelming the bourbon base. It’s a delicious sip, with an elegance in its sweetness—but doesn’t quite push it into standout territory.
Finish – 3.7/5
Finish is moderate in length, soft maple glaze, and a clean finish with light char. There’s no bitterness or off-note but it’s a little too quick to fade. The Finish leaves a good impression but not a lasting one and is too subtle and short to push beyond a mid-Silver score.
Value – 3.8/5
At $77 for a 750ml bottle at 94 proof (47% ABV), Gervasi’s Maple Cask Bourbon lands at the premium edge of craft-finished offerings. While it may be priced slightly above the value zone, the estate-focused production and execution supports the cost. That said, bourbon drinkers seeking bold or intensely maple-forward profiles may find this expression a bit too restrained than expected or desired.
