According to their site, Still Austin is a world-class distillery, located in the heart of Austin, that’s open every day for the public to have a drink, listen to live music, and take a tour.
It’s one of the only distilleries in Texas to source grains from local farmers, distill ecologically in-house, and age in the Texas Hill Country.
Production
Still Austin “The Musician” was designed to be music in a bottle, not just bourbon. It utilizes the same kind of sweet white corn in Austin’s famous tortillas to complement the spiciness of their high-rye mashbill.
Still Austin Bourbon Review: Flavor Profile
Nose – 4/5
Unique and complex with notes of caramel, oak, rosemary, pine, cinnamon, and smoke. Bizzare and intriguing. It smells a bit older and more robust than it really is because it has so many unique notes.
Palate – 3.75/5
The palate settles down a bit and has most of the notes we’ve come to love with a standard bourbon. Oak forward with notes of vanilla and caramel with a touch of maple added in as a welcomed addition. Spicy, earthy notes start coming in as you swirl. The youth comes out a bit more here than in the nose.
Finish – 3.25/5
Heavy spice with oak and pine. Medium in length with just a touch of caramel. Nothing incredibly unique here.
Value – 3.5/5
Coming in at $45, Still Austin is a pretty good value. It has some unique, smoky qualities that you’d come to expect from a distillery in Texas and it does a good job of acting a touch older than it really is.
I certainly think it can compete with other $50 and under bourbons, but it wouldn’t come in on the top half of the list for me because you can simply buy so many great and much older bourbons for a similar price point.
